    Adapted from Quick Cooking 2004 – P. Soper; Vista, AZ
    Little Meat Loaves -- e-w
    Serves: 8

    3 egg whites
    1/2 c. fat-free plain yogurt
    1 6-oz. can tomato paste
    1 T. Worcestershire
    1/2 c. quick-cooking oats
    1 small onion, chopped
    2 T. dried parsley flakes
    1/2 tsp. salt
    1 tsp. poultry seasoning
    1/2 tsp. garlic powder
    1/2 tsp pepper

    2 lbs. lean ground beef
    1/2 c. ketchup

    In a large bowl combine the first 11 ingredients. Crumble beef over mixture and mix well. Shape into 8 loaves. Place on a rack coated with nonstick cooking spray in a shallow baking pan. Bake, uncovered at 350º for 30 minutes. Spoon ketchup over loaves. Bake 15 minutes longer - or - until a meat thermometer reads 160º and meat is no longer pink.

    One meat loaf equals: 264 calories…11 gm fat (4 gm saturated)…42 mg cholesterol…485 mg sodium…15 gm carbohydrate…2 gm fiber…27 gm protein +++EXC” 3 lean meat…1 starch…1/2 fat +++WWP: 6
