    Plan ahead…needs to chill
    Yield: 24

    1 c. finely chopped cooked chicken
    1/4 c. minced green onion
    1/2 c. finely shredded low-fat sharp cheddar cheese
    1/8 tsp. pepper
    2 T. light mayonnaise
    3/4 c. chopped fresh parsley

    In a bowl, combine the first 5 ingredients; mix well. Shape into 3/4-in. balls. Roll in parsley. Cover and chill.

    3 chicken balls equal: 49 calories…79 mg sodium…16 mg cholesterol…2 gm carbohydrate…5 gm protein…3 gm fat ++++ Exchanges: 1 lean meat
