    Bruschetta (Appetizers)
    A tasty pizza-like appetizer
    Serves 4

    4 teaspoons olive oil
    2 slices country-style round Italian loaf, halved crosswise or 4 slices from a long loaf
    4 garlic cloves, halved
    2 large ripe tomatoes, peeled, lightly seeded, and finely chopped
    1/4 cup snipped fresh basil leaves
    coarse salt
    freshly ground black pepper

    Preheat oven to 450 degrees F.

    With a pastry brush paint both sides of each bread slice with olive oil.
    Place the bread slices on a cookie sheet and bake for 10 minutes, or until crisp and golden.

    Rub each bread slice with the cut side of a garlic half and arrange on a plate. (Discard garlic.) Mix the tomatoes and basil in a small bowl, season to taste with salt and pepper, spoon onto the bread slices, and serve.

    NOTE: Some finely chopped purple onion is delicious added to the tomatoes.
