    “French-Fried” Onion Rings & Variation -- e

    “French-Fried” Onion Rings -- e
    SERVES: 4

    1 egg, lightly beaten
    1/2 cup skim milk
    1 large onion, cut into 1/4-inch thick slices and separated into rings
    3/4 cup unseasoned dried bread crumbs
    1 teaspoon chili powder
    1/2 teaspoon salt
    1 tablespoon plus 1 teaspoon
    vegetable oil

    1 In a 9-by-13-inch glass dish, combine the egg and milk. Add the onion rings, toss to coat, and let stand for 30 minutes, turning frequently.

    2 In a shallow bowl, combine the bread crumbs, chili powder, and salt.

    3 Preheat the oven to 450º Spray a jelly-roll pan or baking sheet with nonstick cooking spray.

    4 Dredge the onion rings in the bread crumb mixture.

    5 Place the onion rings in the prepared pan, drizzle evenly with the oil, and bake for 5 minutes. With a spatula, turn the onion rings and bake until golden, about 5 minutes.

    VARIATION:
    Curry-Fried Sweet Onions
    Use a Vidalia onion (or another sweet onion, such as Maui from Hawaii or Walla Walla from Washington state). Use curry powder in place of the chili powder and add minced cilantro to the bread crumb mixture.

    One1-1/2 cup serving equals: 168 CALORIES, 6 g Protein, 7 g Fat, 21 g Carbohydrate, 55 mg Cholesterol, 455 mg Sodium +++EXC: 1 Fat, 1/2 Vegetable, 1 Bread
