    MCR: Artichoke Dip

    MCR: ARTICHOKE DIP

    Serve this dip with an assortment of vegetables or pita bread.
    Microwave
    Makes 2-1/2 cups.

    1/2 cup light sour cream
    1/2 cup light cream cheese
    1/4 cup prepared mustard
    9 ounces canned or frozen artichoke hearts, thawed and chopped
    1/2 cup chopped red bell pepper
    1/2 cup chopped green bell pepper
    1 teaspoon chili powder
    2 tablespoons sliced green onions

    In a 1-quart microwavable bowl, combine sour cream, cream cheese, and mustard. Stir in artichoke, peppers, and chili powder. Cover with waxed paper. Microwave on high 5 minutes, until hot, stirring halfway through cooking time. Garnish with green onions.

    Per 1/4 cup: 40 calories, 2 grams fat, 5 milligrams cholesterol, 4 grams carbohydrates, 2 grams fiber, 2 grams protein, 128 milligrams sodium.
