    Oven-Fried Tex-Mex Onion Rings -- e-w

    Adapted From TOH Diabetic Cookbook 2005
    Oven-Fried Tex-Mex Onion Rings -- e-w
    Serves: 6 (about 8 per serving)

    1/2 c. plain dry bread crumbs
    1/3 c. yellow cornmeal
    1-1/2 tsp. chili powder
    1/8 to 1/4 tsp. ground red pepper (cayenne)
    1/8 tsp. salt
    1 T. + 1-1/2 tsp. stick margarine, melted
    1 tsp. water
    2 medium onions (about 10-ozs.), sliced 3/8-in. thick
    2 egg whites

    Preheat oven to 450º. Spray large nonstick baking sheet with cooking spray; set aside

    Combine the first 5 ingredients in a shallow dish; mix well. Stir in margarine and water.

    Separate onion slices into rings. Place egg whites in a large bowl; beat lightly. Add onions; toss lightly to coat evenly. Transfer to bread crumb mixture; toss to coat evenly. Place in single layer on prepared baking sheet.

    Bake for 12-15 minutes or until onions are tender and coating is crisp.

    One 8-ring serving equals: 115 calories…4 gm fat (trace gm saturated)…4 gm protein…17 gm carbohydrate…2 gm fiber…4 mg cholesterol…165 mg sodium +++EXC: 1 starch…1 fat +++WWP:2
