    Banana-Nut Bread -- w
    Serves: 14

    1 c. mashed very rips banana (about 3 small)
    1/2 c. sugar
    1/2 c. plain nonfat yogurt
    1/4 c. stick margarine, melted
    1 tsp. vanilla
    1 egg
    1 egg white

    2 c. flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/4 c. chopped pecans, toasted
    Baking spray with flour

    Combine the first 7 ingredients in a large bowl; beat at medium speed until well blended. Combine flour and next 3 ingredients; stir in pecans. Add flour mixture to banana mixture; stirring just until moistened. Spoon batter into an 8-1/2 x 4-1/2 x 3-in. loaf pan sprayed with baking spray with flour.

    Bake at 350º got 1 hour and 5 minutes or until a wooden toothpick inserted near the center comes out clean. Cool 10 minutes in the pan on a wire rack; remove from pan and cool completely on wire rack.

    One serving equals:158 calories…3 gm protein…5 gm fat (0.9 gm saturated)…25 gm carbohydrate…1 gm fiber…15 mg cholesterol…124 mg sodium +++WWP: 3
