    Asian Wraps -- e-w
    Serves: 10

    3/4 lb. boneless skinless chicken breast, cooked and shredded
    1/4 lb. fresh bean sprouts
    1/2 small head Napa – or – Chinese cabbage, shredded (about 3 cups)
    1 medium carrot, shredded (about 1 cup)
    6 scallions, thinly sliced

    1/4 c. white vinegar
    3 T. canola oil
    2 T. light soy sauce
    1 T. sesame oil
    2 garlic cloves, minced
    2 tsp. ground ginger
    1/2 tsp. black pepper

    1 to 2 heads Bibb lettuce, separated to obtain 20 leaves

    In a large bowl combine the first 5 ingredients; mix well. In a small bowl, combine the next 7 ingredients; mix well and pour over cabbage. Mix until evenly coated. Spoon an equal amount of the chicken mixture onto the center of each lettuce leaf and fold like an envelope. Turn over and place on a serving platter.

    2 wraps equal: 123 calories…7 gm fat (1 gm saturated)…29 mg cholesterol…154 mg sodium…4 gm carbohydrate…2 gm fiber…12 gm protein +++EXC: 1 lean meat…1 vegetable…1 fat +++WWP:3
