    Angel Food Surprise -- e-w

    Source of Recipe

Mr. Food’s Quick & Easy Diabetic Cooking 2001
    Angel Food Surprise -- e-w
    Serves: 12

1 prepared (10-oz.) angel food cake
1 pt. fat-free vanilla-raspberry swirl frozen yogurt, softened
1/2 c. frozen light whipped topping, thawed
    1/2 c. fresh raspberries
    Fresh mint sprigs

Place the cake on a serving plate. With a serrated knife, slice the top 1-inch off the cake by slicing it horizontally all the way around; carefully remove the top of the cake and reserve.

Cut and scoop out a tunnel in the center of the cake, leaving a 3/4-inch border of cake on the sides and the bottom. (Reserve scooped-out cake for another use.) Spoon the frozen yogurt evenly into the tunnel, then replace the cake top. Wrap with plastic wrap and freeze until firm from 2 hours up to 3 days.

Before serving, dollop the cake with whipped topping and garnish with raspberries and mint.

Actually use the flavor combinations you prefer as to the yogurt and fruit.
