Chocolate Cinnamon Snacking Cake
Serves: 12
1/2 c. evaporated skim milk
7 T. light corn oil spread, melted
1 egg white, slightly beaten
1/2 tsp vanilla
1-1/4 c. HERSHEY Basic Cocoa Baking Mix (see Make Your Own Chapter)
1/4 tsp. cinnamon
1/2 c. raisins
Powdered Sugar Glaze (recipe below)
Heat oven to 350º. Spray an 8-in. square baking pan with non-stick cooking spray.
In a large mixer bowl, stir together the first 4 ingredients. Add Basic Cocoa Baking Mix and cinnamon. Beat on LOW speed until well blended. Stir in raisins. Pour batter into prepared pan.
Bake 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack. Drizzle with Glaze. Let stand until set. Cut into 12 squares. Store, covered, at room temperature.
Powdered Sugar Glaze: In a small bowl, stir together 1/4 c. powdered sugar and 1-1/2 tsp. warm water until of desired consistency.
