    Chocolate Marvel Cake

    Chocolate Marvel Cake

    Diabetic Exchanges
    Serves: 16

    1 c. strong brewed coffee
    1 c. milk
    2 4-oz. jars pureed prune baby food
    4 egg whites
    2 tsp. vanilla

    2 c. flour
    2 c. sugar
    3/4 c. baking cocoa
    2 tsp. baking soda
    1 tsp. baking powder

    FROSTING:
    6 T. stick margarine, softened
    2-2/3 c. confectioners (powdered) sugar
    1/4 c. baking cocoa
    2 T. skim milk
    2 T. strong brewed coffee
    1 tsp. vanilla

    In a mixing bowl combine the first 5 ingredients, beat until well blended. Combine
    Remaining ingredients, add to coffee mixture. Beat for 2 minutes or until well blended (batter will be thin).

    Pour into 2 greased and floured 9-in. round cake pans. Bake at 350º for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely.

    For Frosting:
    In a mixing bowl cream margarine, sugar and cocoa. Gradually add milk, coffee and vanilla. Beating well. Frost between layers and top and sides of cake.

    One slice (1-16th of cake) equals: 306 calories…577 mg sodium…trace cholesterol…64 gm carbohydrate…4 gm protein…5 gm fat ++++Exchanges: 3 starch…1 fruit…1 fat
