    Fluffy Coconut Frosting - w
    Yield: about 4 cups

    4 large egg whites
    1/2 tsp. cream of tartar
    Dash of salt
    1 c. sugar
    1/4 c. water
    1/2 tsp. vanilla
    1/4 tsp. coconut extract

    Place the first 3 ingredients in a large bowl; beat with a mixer at HIGH speed until stiff peaks form. Combine sugar and water in a saucepan, bring to a boil. Cook without stirring, until a candy thermometer registers 238º. Pour hot sugar syrup in a thin stream over egg whites, beating at HIGH speed. Stir in extracts.

    One 1/4-cup serving equals: 54 calories…0 fat…0.9 protein…12.7 carbohydrate…0 fiber…0 cholesterol…32 mg sodium ++++ WWP: 1
