    LOW-FAT DEVIL’S FOOD CAKE

    1 pkg. (18-1/4 oz.) reduced-fat devil’s food cake mix
    1 carton (8 oz.) nonfat plain yogurt
    1/2 c. orange juice
    1/2 c. water
    Egg substitute equivalent to 2 eggs
    2 T. unsweetened applesauce
    2 T. grated orange peel
    1 tsp. ground cinnamon

    GLAZE:
    1 c. confectioners’ sugar
    2 T. baking cocoa
    2 T. orange juice
    1/2 tsp. vanilla extract

    In a mixing bowl, combine the first 8 ingredients; beat on low speed for 1 minute, scraping the bowl constantly. Coat a 10-in. fluted tube pan with nonstick cooking spray and dust with flour. Pour batter into pan. Bake at 350-F for 50-55 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack to cool completely. Combine glaze ingredients; drizzle over cake.
