RICH CHOCOLATE CAKE WITH RASPBERRY SAUCE

2 cups frozen raspberries in syrup, thawed, pureed & strained
1 tblsp cornstarch
2 cups all purpose flour
1-1/3 cups skim milk
1 cup sugar
2/3 cup margarine, softened
1 cup Egg Beaters
2/3 cup unsweetened cocoa
1-1/2 tsps pure vanilla extract
1-1/2 tsps baking powder
1/2 tsp baking soda
Mint sprigs for garnish
In small saucepan over med-high heat, cook raspberries & cornstarch, stirring constantly until mixture thickens & begins to boil; chill. In med bowl with electric mixer at low speed, mix flour, milk, sugar, margarine, Egg Beaters, cocoa, vanilla, baking powder & baking soda just until blended. Beat at high speed 3 mins. Spread batter in lightly grease 13" X 9" baking pan. Bake at 350F 30-35 mins or until wooden toothpick inserted in center comes out clean. Cool in pan 10 mins. Remove & cool on wire rack. Cut into 16 pieces. Serve topped with raspberry sauce & mint sprigs.
