    Fish: Dilly Red Snapper

    Dilly Red Snapper

    Serves: 2

    1 medium lemon, thinly sliced
    2 green onions, sliced
    2 dill sprigs
    2 red snapper fillets (6 oz. each)
    Dash pepper
    1.8 tsp. salt; optional

    Dill Sauce:
    1/3 c. fat-free mayonnaise
    1 garlic clove, minced
    1/2 tsp. snipped fresh dill…or…1/8 tsp. dill weed
    1/2 tsp. lemon juice
    1/2 tsp. minced green onion

    Place the first 3 ingredients in a foil-lined baking pan. Top with fish fillets; sprinkle with salt and pepper. Fold foil around fish and seal tightly. Bake at 400º for 20-25 minutes or until fish flakes easily with a fork.

    Sauce: In a small bowl, combine sauce ingredients. Serve with fish.

    One fillet (calculated w/o added salt) with 2-1/2 T. sauce equals: 216 calories…3 gm fat (1 gm saturated…67 mg cholesterol…432 mg sodium…10 gm carbohydrate…2 gm fiber…35 gm protein +++++ Exchanges: 5 very lean meat…1/2 starch ++++ WWP: 4.8
