    Easy Citrus Salmon Steaks – 2 -- e-w
    Serves: 2

    1 fresh or frozen salmon steak, cut 1-inch thick (about 8 oz. total)
    1 teaspoon finely shredded lemon or orange peel
    1 tablespoon lemon or orange juice
    1 clove garlic, minced
    1/8 teaspoon pepper
    Nonstick cooking spray
    1 tablespoon sliced green onion
    1 medium orange, peeled and sliced crosswise

    Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a small bowl, stir together lemon or orange peel, lemon or orange juice, garlic and pepper.

    Coat the unheated rack of a broiler pan with cooking spray. Place fish on rack. Brush with half of the lemon juice mixture. Broil 4 inches from the heat for 5 minutes. Using a wide spatula, carefully turn fish. Brush with the remaining lemon juice mixture. Broil for 3 to 7 minutes more or until fish flakes easily when tested with a fork.

    To serve, cut the fish into 2 portions and sprinkle with green onions. Serve with orange slices.
