    Pasta: Fresh Tomato Pasta - w

    Fresh Tomato Pasta - w
    Serves: 2

    3 medium tomatoes
    1-1/4 c. uncooked penne – or – medium tube pasta
    1/2 c. chopped green pepper
    1/3 c. chopped onion
    1 garlic clove, minced
    1 T. olive oil
    1/4 tsp. salt
    Dash pepper
    1 tsp. minced fresh basil
    1 tsp. minced fresh oregano

    Wash & core tomatoes. Place in boiling water for 30 seconds and immediately dip in ice water; drain. When cool enough to handle, remove skins and discard. Seed and chop tomatoes; set aside.

    Cook pasta according to package directions. Meanwhile in a skillet sauté the next 3 items in oil for 2-3 minutes or until tender. Stir in the tomatoes, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in basil and oregano. Drain Pasta; toss with tomato mixture.
