    Turkey: Jerk Turkey Salad (Grill)

    Jerk Turkey Salad

    Serves: 2

    6 oz. turkey breast tenderloin
    1-1/2 tsp. Caribbean jerk seasoning
    4 c. packaged mixed salad greens
    3/4 c. sliced peeled cucumber
    2/3 c. chopped fresh pineapple
    2/3 c. quartered strawberries or raspberries
    1/2 c. slivered peeled jicama or sliced celery
    1 green onion, sliced
    1/4 c. lime juice
    3 T. honey

    Prepare grill for direct grilling. Rub turkey with jerk seasoning. Grill turkey 15-20 minutes or until turkey is no longer pink and juices run clear, turning once. Remove from grill and cool.

    Cut turkey into bite-sized pieces. Toss together with the next 6 ingredients. Combine lime juice and honey. Toss with salad mixture. Serve immediately.

    One serving equals: 265 calories…2 gm fat (1 gm saturated)…17 gm protein…48 gm carbohydrate…34 mg cholesterol…356 mg sodium…6 gm fiber ++++ WWP: 5
