    Oven “Fries” – 2 -- e-w
    Plan ahead…potatoes need to refrigerate for 1 to 2 days
    Serves: 2

    2 small baking potatoes
    2 tsp. olive oil
    1/4 tsp. salt –or- onion salt

    Place potatoes in refrigerator for 1 to 2 days. Preheat oven to 450º. Peel potatoes and cut lengthwise into 1/4-in. square strips. Place in colander. Rinse potato strips under cold water 2 minutes. Drain. Pat dry with paper towels. Place potatoes in small resealable plastic food storage bag. Drizzle with oil. Seal bag; shake to coat potatoes with oil

    Arrange potatoes in single layer on baking sheet. Bake 20-25 minutes or until light brown and crisp. Sprinkle with salt or onion salt.

    One serving equals: 237 calories…7 gm fat (1 gm saturated)…41 gm carbohydrate…0 mg cholesterol…3 gm fiber…4 gm protein…300 mg sodium. +++EXC: 2-1/2 starch…1 fat +++WWP: 5
