    Microwave FISH FILLETS W/ STUFFING
    Serves: 8

    1 T. margarine, melted
    1/3 c. chicken broth
    1/2 c. finely chopped onion
    1/2 c. grated carrots
    1/2 c. chopped fresh mushrooms
    1/4 c. minced fresh parsley
    1/2 c. dry bread crumbs
    1 egg
    1 T. lemon juice
    1/8 tsp. pepper

    2-1/2 lbs. cod, haddock or whitefish fillets
    Paprika

    In a large bowl, combine the firs 10 ingredients; mix well.

    In a 13-in. x 9-in. x 2-in. microwave-safe dish coated with nonstick cooking spray; arrange the fillets with stuffing between them. Moisten microwave-safe paper towels with water; place over fish.

    Cook on high for 15-16 minutes or until fish flakes easily with a fork, rotating dish occasionally. Sprinkle with paprika.
