    Plan ahead…needs to chill overnight
    Serves: 6

    1 large cantaloupe
    1 3 oz. pkg. strawberry-banana gelatin
    1 c. boiling water 1/2 c. unsweetened applesauce
    1 c. sliced fresh strawberries

    Cut melon in half lengthwise from bud to stem, discard seeds. Cut a thin slice of the bottom of each half, so melon sits level; pat dry. In a bowl dissolve gelatin in boiling water. Stir in apple sauce and strawberries. Pour into melon halves (discard any remaining gelatin mixture or save it for another use). Cover melon with plastic wrap and refrigerate overnight. Just before serving, slice each melon half into 3 wedges.

    One serving equals: 72 calories…trace fat (trace saturated) 0 cholesterol…21 mg sodium…17 gm carbohydrate…2 gm fiber…2 gm protein ++++ Exchanges: 1 fruit ++++ WWP: 1
