    Sparkling Orange Fruit Compote

    Sparkling Orange Fruit Compote
    Makes 4 servings

    4 Sunkist Valencia oranges, divided usage
    1 cup fresh berries, halved if large
    1 cup peeled melon or peach chunks
    1 kiwifruit, peeled and diced
    1 teaspoon minced candied ginger (optional)
    1 cup sparkling water, ginger ale, sparkling wine or champagne
    Fresh mint (optional)

    Peel two oranges and cut into bite-size pieces. In a medium bowl, toss together oranges, berries, melon and kiwifruit. Juice two oranges to yield about 2/3 cup juice. Sliver some orange peel to yield 1 teaspoon. Combine orange juice, peel and ginger; pour over fruit and toss gently. Cover and chill.

    To serve, divide fruit among four dessert dishes or long stemmed glasses. Pour desired beverage over fruit; garnish with mint, if desired. Serve immediately.
