    Cheesy Spinach Casserole - e-w

    Cheesy Spinach Casserole - e-w
    Serves: 6

    3/4 c. chopped onion
    1 T. stick margarine
    Egg substitute equivalent to 2 eggs
    1 egg
    1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
    2 c. small-curd 2% cottage cheese
    1 c. 4-oz. shredded reduced-fat cheddar cheese
    3 T. flour
    1/8 tsp. salt

    In a small nonstick skillet, sauté onion in margarine until tender. In a large bowl, combine egg and egg substitute and spinach. Stir in cottage cheese and cheddar cheese, flour, salt and onion. Pour into a 1-1/2-qt. baking dish coated with nonstick cooking spray. Bake, uncovered, at 350º for 50-6- minutes or until set.

    One serving equals: 199 calories…8 gm fat (3 gm saturated)….53 mg cholesterol…440 mg sodium…10 gm carbohydrate…2 gm fiber…20 gm protein ++++ Exchanges: 2 lean meat…1 fat ++++ WWP: 4
