    Creamy Two-Cheese Macaroni - w

    1/4 flour
    2-1/2 c. 1% low-fat milk
    1 c. (4-oz.) shredded extra sharp cheddar cheese, ‘divided’
    6 oz. light processed cheese (such as Velveeta light), cubed
    6 c. hot cooked elbow macaroni (about 3 cups uncooked)
    1/8 tsp. salt
    Cooking spray

    Preheat oven to 375º. Lightly spoon flour into a dry measuring cup, level with knife. Heat a large saucepan over medium heat; add flour. Gradually add milk; stirring with a whisk until blended. Cook until thick (about 8 minutes, stirring frequently. Stir in 2/3 c. cheddar cheese and processed cheese, cook 3 minutes or until cheese melts, stirring frequently. Remove from heat; stir in macaroni and salt.

    Spoon into a 2-qt. casserole dish coated with cooking spray. Sprinkle with 1/3 c. cheddar cheese. Bake at 375º for 25 minutes or until bubbly.

    One 2/3-cup serving equals: 260 calories…7.5 gm fat (4.5 gm saturated)…14 gm protein…34 gm carbohydrate…1.3 gm fiber…24 mg cholesterol…412 mg sodium ++++ WWP: 6
