    Curried Rice and Spinach

    Serves: 6

    1 pkg. (10 oz.) frozen, chopped spinach, thawed and drained well
    1/4 c. chopped onion
    1/8 tsp. garlic powder
    1 tsp. curry powder... (or to taste)
    Pepper to taste
    1/2 c. skim milk
    Egg substitute equivalent to 1 egg
    3 c. cooked brown rice

    In a large bowl, combine all ingredients, mix well. Spoon mixture into a casserole dish, coated with nonstick cooking spray. Bake at 350º for 30-35 minutes or until set.

    One serving equals: 151 calories…6 gm protein…2 gm fat…29 gm carbohydrate…57 mg sodium…trace cholesterol ++++ Exchanges: 1 bread/starch…3/4 vegetable
