    Double-Bean Lunch Burritos

    Serves: 4

    1 c. nonfat refried beans
    1 c. canned black beans, rinsed and drained
    1 can (4 oz.) chopped green chili peppers, drained
    1 tsp. ground cumin
    4 to 8 lettuce leaves
    4 (8-in.) flour tortillas

    Salsa, if desired

    In a medium bowl, stir together the first 4 ingredients. Arrange lettuce leaves on tortillas. Spoon about 1/2 c. bean mixture near one edge of each tortilla.

    Top with salsa if desired. Roll tortilla around filling. Serve immediately.

    May be warmed in microwave if desired.

    One tortilla (calculated w/o salsa) equals: 269 calories…12 gm protein…50 gm carbohydrate…3 mg cholesterol…565 mg sodium…4 gm fat (1 gm saturated)
