    Stuffed Shells

    Yield: 7 servings

    3/4 of a 12 oz. pkg. large shells (21 shells)
    1 (10 oz.) box frozen chopped spinach, thawed & drained
    1 onion, chopped
    2 teaspoon diet margarine
    2 egg whites, beaten
    2/3 cup part-skim ricotta cheese
    1/2 cup Parmesan cheese
    1/2 teaspoon nutmeg
    1 (28 oz.) jar meatless spaghetti sauce

    Cook shells according to directions on package. Defrost and squeeze excess water from spinach.

    In skillet, cook onion in margarine until tender. Add spinach; heat through. Combine eggs, ricotta cheese, Parmesan cheese, nutmeg and spinach mixture.

    Pour half the meatless spaghetti sauce in a baking dish.
    Stuff shells with filling; arrange in dish and top with remaining sauce. Bake in 350 degrees, preheated oven for 30 minutes.
