    Recipe Introduction

    Uses reserved vegetables from Farmer's Market Stovetop Casserole...(Meatless Entrees) Serves: 4

    16 oz. prepared pizza crust
    4 medium Italian plum tomatoes, thinly sliced crosswise (13 to 14 oz.)
    2 T. finely chopped fresh basil..OR.. 2 tsp. dried basil crumbled

    2 c. reserved vegetable mixture from Farmer’s Stovetop Casserole (meatless entrees)

    3 oz. feta cheese, rinsed and crumbled

    Preheat oven to 450º. Put pizza crust on baking sheet. Arrange tomato slices on crust, sprinkle with basil and top with vegetable mixture. Bake for 5 minutes or until crust is light golden brown. Sprinkle with feta.

    COOK’S TIP: For a creamier texture, add feta before baking the pizza.


    1/4 of pizza equals: 400 calories…14 gm protein…76 gm carbohydrate…19 mg cholesterol…5 gm fat (3 gm sat; 0 gm poly; 1 gm mono)…7 gm fiber…394 sodium
