    Apple Topped Chops

    Low-Fat Country Cooking – S. Vinson; Granite Falls, NC
    Apple Topped Chops
    Serves: 6

    6 loin pork chops (3/4-in thick), trimmed
    1 medium onion, thinly sliced into rings
    1/2 c. raisins, ‘divided’
    3 medium apples, cut into 1/2-in. slices

    1 c. apple juice
    1 T. brown sugar
    1/2 tsp. dried basil
    1/4 tsp. ground nutmeg
    1/8 tsp. ground cloves

    In a large skillet coated with cooking spray. Brown pork chops over medium heat. Place in an ungreased 3-qt. baking dish. Place onion rings over chops. Sprinkle with 2/3 of the raisins. Arrange apple slices on top and sprinkle with remaining raisins. Combine the remaining ingredients, pour over all. Cover and bake at 350º for 1 hour. Uncover and bake 30 minutes longer or until meat is tender.
