    Pork Roast w/Apricot Glaze -- w

    BH&G 5-Ingredient Slow Cooking
    Pork Roast w/Apricot Glaze -- w
    Serves: 8

    1 3- to 3-1/2 lb. boneless pork shoulder roast
    1 18 oz. jar apricot preserves
    1 large onion, chopped
    1/4 c. chicken broth
    2 T. Dijon-style mustard

    Trim fat from meat. If necessary, cut meat to fit into a 3-1/2 to 6 qt. slow cooker. Place meat in cooker. For glaze combine remaining ingredients; pour over meat.

    Cover and cook on LOW for 10-12 hours – or – on HIGH for 5 to 6 hours. Transfer meat to a serving platter. Skim fat from glaze. Spoon some of the glaze over the meat; discard remaining glaze.

    One serving equals: 456 calories…10 gm fat (3 gm saturated)…93 mg cholesterol…184 mg sodium…61 gm carbohydrate…2 gm fiber…29 gm protein +++WWP:10
