    Citrus Vinaigrette

    Adapted From The Complete Diabetes Prevention Plan
    Citrus Vinaigrette

    Yield: About 1/2 cup

    - 1/4 cup extra virgin olive oil
    - 2 tablespoons white wine vinegar
    - 1 tablespoon lemon juice
    - 1 tablespoon frozen (thawed) orange juice concentrate
    - 1 tablespoon honey
    Pinch salt
    - 1/4 teaspoon dried thyme
    - 1/4 teaspoon ground black pepper

    Combine all of the ingredients in a blender and blend for 1 minute to mix well. Serve immediately or cover and refrigerate until ready to use. Shake well before serving.
