    Mr. Food’s Quick & Easy Diabetic Cooking 2001
    Fruit-Full Tossed Chicken Salad -- e-w
    Serves: 4

    1 pkg. (4-oz.) mixed baby greens
    2 c. chunked cooked chicken
    2 scallions, thinly sliced
    1 c. sliced strawberries
    1 15-oz. can no-sugar-added sliced peaches, drained with liquid reserved

    3 T. no-sugar-added peach preserves
    1 T. red wine vinegar
    1 tsp. yellow mustard
    1/8 tsp. ground red pepper

    In a large salad bowl, combine the first 5 ingredients. In a small bowl, combine 1/3 c. of the reserved peach liquid and remaining ingredients; mix well. Pour over salad and toss well. Serve immediately.

    1/4 of recipe equals: 202 calories…3 gm fat (1 gm saturated)…60 mg cholesterol… 84 mg sodium…21 gm carbohydrate…3 gm fiber…23 gm protein +++EXC: 3 very lean meat…1-1/2 fruit +++WWP: 4
