    Vegetable: Spinach & Pasta Salad

    Spinach & Pasta Salad
    Sour cream and orange juice add a refreshing tanginess to this salad.

    6 servings

    PASTA:
    4 ounces (1 1/2 cups)uncooked dried cavatappi or bow tie pasta

    DRESSING:
    1/2 cup LAND 0 LAKES Light Sour Cream
    1/4 cup orange Juice
    2 tablespoons chopped green onions
    1 teaspoon sugar
    1 teaspoon grated orange peel

    SALAD:
    3 cups lightly packed torn fresh spinach leaves
    1/4 cup pine nuts, toasted
    6 slices crisply cooked bacon, crumbled
    1 medium orange, pared, sectioned

    Cook pasta according to package directions (omitting salt). Rinse with cold water; drain.

    Meanwhile, in small bowl whisk together all dressing ingredients.

    To serve:
    In large bowl combine pasta, all salad ingredients and 1/2 cup dressing; toss to coat.


    One serving equals: Calories 180; Protein 8 g; Carbohydrate 22 g; Fat 8 g; Cholesterol 10 mg; Sodium 140 mg
