    Overnight Vegetable Salad
    Plan ahead…needs to marinate 8 hours or overnight

    Serves: 12

    2-1/2 c. cauliflowerets
    2 c. sliced fresh mushrooms
    1-1/2 c. broccoli flowerets
    1-1/2 c. sliced carrots
    1-1/2 c. yellow summer squash
    12 c. vegetable oil
    1/2 c. cider vinegar
    2 tsp. sugar
    1 tsp. dill weed
    1/2 tsp. garlic powder
    1/2 tsp. pepper

    In a bowl combine the vegetables; set aside. In a jar with a tight-fitting lid combine remaining ingredients and shake well. Pour over vegetables, toss gently. Cover and refrigerate for 8 hours or overnight.

    One serving equals 105 calories…15 mg sodium…0 cholesterol…6 gm carbohydrate…1 gm protein…9 gm fat…2 gm fiber ++++ Exchanges: 2 fat…1 vegetable ++++ WWP: 2
