    Sweet Potato Salad - e
    Plan ahead…needs to chill for at least 1 hour.
    Serves: 10

    3 lbs. sweet potatoes, cooked peeled and cubed
    1/2 c. finely chopped onion
    1 c. chopped green pepper
    1/4 tsp. pepper
    1-1/2 c. light mayonnaise
    Dash hot pepper sauce

    Combine first 4 ingredients in a large bowl. Stir together mayonnaise and hot pepper sauce. Stir into potato mixture, mix well. Cover and refrigerate at least 1 hour before serving.

    1/10 of recipe equals: 217 calories…167 mg sodium…5 mg cholesterol…38 gm carbohydrate…4 gm protein…7 gm fat ++++ 2 starch…1-1/2 fat
