    Recipe Introduction

    Plan ahead…needs to marinate from 2 to 24 hours. WW Points
    Serves: 4 to 6

    1 medium cucumber, thinly sliced (1-1/3 c.)
    3 c. sliced fresh mushrooms (8 oz.)
    1 small red or green sweet pepper, cut into strips
    4 green onions, sliced (1/4 c.)
    1/2 c. white wine vinegar
    1/4 c. sugar
    1 T. snipped fresh dill …OR…3/4 tsp. dried dillweed
    1/8 tsp. salt
    1/8 tsp. pepper

    In a large bowl, combine the first 4 ingredients. In a small bowl, combine remaining ingredients. Stir until sugar is dissolved. Pour over cucumber mixture; toss to coat. Cover and chill for 2 to 24 hours, stirring occasionally. Serve with a slotted spoon.

    One serving (based on 6) equals: 52 calories…1 gm fat (0 saturated)…0 cholesterol…32 mg sodium…11 gm carbohydrate…1 gm fiber…3 gm protein ++++ WWP: 1.5
