    Carrot & Jicama Relish w/Cilantro -- w

    The Low Fat Way to Cook 1993
    Carrot & Jicama Relish w/Cilantro -- w
    Yield: 2 cups

    1 c. peeled, cubed jicama
    2/3 c. sliced carrots
    1/4 c. freshly packed cilantro
    2 T. sliced green onions
    2 tsp. chopped fresh green chile pepper (wear protective gloves and avoid touching face)
    1/2 tsp peeled minced gingerroot
    1 small garlic clove, halved

    1/3 c. water
    1/3 c. lime juice
    2 T. sugar
    1/4 tsp. salt

    Position knife blade in food processor. Add the first 7 ingredients; process 5 seconds or until ingredients are coarsely chopped. Transfer mixture to a small bowl. Add water and remaining ingredients to chopped mixture; toss well. Cover and chill. Serve with a slotted spoon. Serve with chicken or seafood.
