    Minted Pineapple Relish -- e-w

    Minted Pineapple Relish
    Plan ahead needs to chill from 1 to 24 hours
    Makes 8 servings.

    1 cup canned pineapple chunks (juice-pack), drained
    1/2 cup lightly packed fresh mint leaves (1/4 ounce)
    1 Tbsp. coarse-grain brown mustard

    In a blender container or food processor bowl, combine the pineapple, mint, and mustard. Cover and blend or process just until combined. Cover and chill in the refrigerator for at least 1 hour or up to 24 hours. Serve with chicken, pork, or lamb.
