    SIZZLIN' SALSA!
    Makes about 8 cups.
    6 cups seeded and diced tomatoes (fresh, not canned)
    2 cups diced onions
    6 cloves garlic, minced
    5 jalapeno peppers, seeded and minced
    1 cup tomato sauce
    1 tbsp. ground cumin
    1/2 tsp. paprika
    1/2 tsp. salt
    2 tbsp. red wine vinegar or cider vinegar
    1/8 tsp. cayenne pepper(or to taste)
    1/2 cup chopped fresh cilantro
    3 tbsp. lime juice (preferably fresh)

    Combine tomatoes, onions, garlic and jalapenos in a large saucepan. Cook over medium-high heat for about 10 minutes, stirring often Stir in tomato sauce, cumin, paprika, vinegar, salt and cayenne pepper. Continue to cook for another 10 minutes. Remove from heat. Add cilantro and lime juice. Mix well. Serve when cool.

    Hint: Store salsa in the fridge in a sealed jar. It will keep for about 1 week (but it will never last that long).

    The fresh cilantro is what makes this salsa taste like the kind at Tex-Mex restaurants--don't leave it out.

    If you want a less-chunky-kind of salsa, transfer it to a blender and pulse on and off for a second or two. (Don't go crazy or you'll end up with soup!)
