    Tomato Salsa -- e

    "Light and Easy Diabetes Cuisine"
    Tomato Salsa
    Serves: 4 (Makes about 1-1/2 cups)

    - 1-1/4 cups canned Italian plum tomatoes, drained
    - 1/4 cup chopped green onions
    - 1 celery stalk, diced
    - 1 tablespoon fresh lime juice
    - 1 teaspoon minced garlic
    - 2 tablespoons chopped fresh parsley or cilantro
    - 1/4 teaspoon hot red pepper flakes
    - Pepper to taste

    Coarsely chop tomatoes. Combine all ingredients and chill before serving.

    3/4-cup equals: 20 Calories, 0 mg Cholesterol, 5 g Carbohydrates, 1 g Protein, 130 mg Sodium, 0 g Fat ++++ Diabetic Exchanges: 1 Vegetable
