    BBQ Pork Sandwiches -- e

    BBQ Pork Sandwiches

    1 pork shoulder roast (about 5 lbs.), trimmed and cut into 1-in. cubes
    2 medium onions, coarsely chopped
    2 T. chili powder
    1-1/2 c. water
    1 c. ketchup
    1/4 c. vinegar
    Bread or rolls of your choice

    In a Dutch oven, combine the first 6 ingredients. Cover and simmer for 4 hours or until meat falls apart easily. Skim off fat. With a slotted spoon, remove meat, reserving cooking liquid. Shred meat with 2 forks. Return to cooking liquid and heat through. Serve on bread or rolls.

    One 1-2/-cup serving (calculated w/o bread or rolls) equals: 202 calories…219 mg sodium…84 mg cholesterol…4 gm carbohydrate…24 mg protein…9 gm fat ++++ Exchanges: 3 lean meat…1 vegetable
