    Chunky Sloppy Joes -- e-w
    Serves: 8

    1 lb. lean ground beef
    1 small zucchini
    1 small onion, chopped
    1 small tomato, chopped
    2 c. light spaghetti sauce
    8 hamburger buns, split

    In a large skillet brown the first 3 ingredients, for 10-12 minutes or until the beef is no longer pink and zucchini is tender. Reduce heat. Stir in tomato and spaghetti sauce. Cook for 4-5 minutes or until heated through. Spoon over bottom of buns and cover with tops. Serve immediately
