    Confetti Scrambled Egg Pockets -- e-w

    Serves: 6

    1 c. fresh or frozen corn
    1/4 c. chopped green pepper
    2 T. chopped onion
    1 2-oz. jar diced pimentos, drained
    1 T. stick margarine

    1-1/4 c. egg substitute
    3 eggs
    1/4 c. fat-free evaporated milk
    1/2 tsp. seasoned salt

    1 medium tomato, seeded and chopped
    1 green onion, sliced
    3 whole wheat pita breads (6-inches), halved

    In a large nonstick skillet, sauté the first 4 ingredients in margarine for 5-7 minutes or until tender. Combine the next 4 ingredients; pour into skillet. Cook and stir over medium heat until eggs are completely set. Stir in tomatoes and green onion. Spoon about 2/3-cup into each pita half.

    One filled pita half equals: 207 calories…6 gm fat (1 gm saturated)…107 mg cholesterol...538 mg sodium… 28 gm carbohydrate…4 gm fiber…13 gm protein ++++ Exchanges: 1-1/2 starch…1 lean meat…1 vegetable…1/2 fat ++++ WWP: 4
