Recipe Introduction
Origional recipe used canned kidney beans...which would have been 851 mg sodium per serving (Above the Limits For This Cookbook). Making your own reduced it to only 451 mg per serving......Beans are easy to make and can be frozen. See Make-Your-Own Section.
Meatless Sloppy Joes
Makes 4 servings
Nonstick cooking spray
2 cups thinly sliced onions
2 cups chopped green bell peppers
2 cloves garlic, finely chopped
2 tablespoons ketchup
1 tablespoon prepared mustard
2 c. cooked (w/o salt) kidney beans, mashed (See Make-Your-Own Section)
1 can (8 ounces) tomato sauce
1 teaspoon chili powder
Cider vinegar
2 sandwich rolls, halved
Spray large nonstick skillet with cooking spray. Heat over medium-high heat until hot. Add onions, peppers and garlic. Cook and stir 5 minutes or until vegetables are tender. Stir in ketchup and mustard. Add beans, tomato sauce
and chili powder to skillet. Reduce heat to medium-low. Cook and stir 5 minutes or until thickened, adding up to 1/3 cup cider vinegar if mixture is too dry.
Spoon bean mixture evenly over sandwich roll halves. Garnish as desired.
