    The Low Fat Way to Cook 1993
    Brandied Peach Sauce -- w
    Yield 3/4-cup + 3 Tablespoons

    3 T. sugar
    2 tsp. cornstarch
    1/2 c. peach nectar
    1/4 c. unsweetened orange juice
    2 T. brandy
    1/2 tsp. vanilla extract
    1/8 tsp. almond extract

    Combine sugar and cornstarch in a small sauce pan. Gradually stir in peach nectar and orange juice. Cook over medium heat, stirring constantly until mixture comes to a boil. Reduce heat, and simmer 1 minute stirring constantly. Remove pan from heat; add brandy and flavorings, stirring well.

    Serve warm or chilled over ice milk, nonfat frozen yogurt, angel food cake or fat-free pound cake.
