    Brown Sugar Baked Beans -- e-w
    Serves: 8

    1-2/3 c. dried pinto beans
    1 medium onion, chopped1 c. chunky salsa
    1/2 c. packed brown sugar
    1/2 tsp. garlic powder
    1/2 tsp. ground cumin
    1/4 tsp. ground oregano
    1/8 to 1/4 tsp. cayenne pepper

    Place beans in a Dutch oven or soup kettle; add water to cover by 2-in. Bring to a boil. Remove from heat, cover and let stand for 1 hour.

    Drain and rinse beans, discarding liquid. Return beans to Dutch oven, addd onion and enough water to cover by 2-in.. Bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until the beans are tender.

    Drain beans and place in an ungreased 2-qt. baking dish. Add remaining ingredients. Cover and bake at 350º for 25 minutes or until heated through.

    One 1/2-cup serving equals: 202 calories…1 gm fat (trace saturated)…0 cholesterol…159 mg sodium…42 gm carbohydrate…9 gm fiber…9 gm protein +++EXC: 2-1/2 starch +++WWP: 2
