    Southwestern Hominy

    1 c. chopped onion
    2 garlic cloves, minced
    2 cans (15-1/2 oz., each) yellow hominy, drained
    2 c. chopped tomatoes
    1 can (4 oz.) chopped green chilies
    1 tsp. chilli powder
    1/2 tsp. ground cumin
    1/4 tsp. pepper
    1/2 c. reduced-fat shredded cheddar cheese

    In a large skillet coated with nonstick cooking spray, sauté onion and garlic until tender. Add the next 6 ingredients; mix gently, Transfer to a 2-qt. baking dish coated with nonstick cooking spray. Bake, uncovered, at 350º for 25 minutes. Sprinkle with cheese, bake 5 minutes longer or until cheese is melted.

    One 1/2-cup serving equals: 76 calories…223 mg sodium…1 mg cholesterol…14 gm carbohydrate…3 gm protein…1 gm fat ++++ Exchanges: 1 starch
