    Wild Rice with Apricots

    8 servings-3/4 cup each

    6-ounce package brown rice and wild rice mix
    1/3 cup no-added-salt chicken or vegetable broth
    1 small onion, cut into strips
    16-ounce can apricot halves, drained and chopped
    1/2 teaspoon sage
    1/8 teaspoon pepper

    Prepare rice mix according to package directions.

    In a skillet, heat chicken broth and onion until onion is soft. Stir in diced apricots, sage, and pepper; heat through. When rice is done, pour apricot mixture over the rice, toss to mix, and transfer to a serving dish.

    One 3/4-cup serving equals: 65 calories…0 fat… 1 gm. Protein… 15 gm. Carbohydrate… 0 cholesterol… 5 mg. sodium. ++++ Exchanges: 1 fruit.
