    Cranberry Rice -- e-w

    Cranberry Rice
    Makes 4 (1/2 cup) Servings.

    1 package wild and white rice
    1/4 cup toasted walnuts
    1/4 cup sliced green onions
    1/2 cup dried cranberries
    1 tsp orange zest
    1 tsp olive oil
    Pepper to taste

    Prepare the rice according to package directions (includes 1 Tbsp butter). In a medium bowl, mix together the walnuts, green onions, cranberries, zest, olive oil, salt and pepper. Add the rice
    and toss well.

    One 1/2-cup serving equals: 278 Cal; 9 g Total Fat; 45 g Carb; 6 g Protein; 2 g Dietary Fiber; 7 mg Cholesterol; 502 mg Sodium; 12 g Sugars. ++++ Exchanges: 2 Starch; 1 Fruit; 2 Fat. +++WWP: 6
