    Diabetic Low-Fat & No-fat Meals in Minutes – M.J. Smith, R.D.
    Rice w/Nuts & Spice
    Serves: 4

    1 c. instant rice
    1 c. no-salt-added reduced-fat chicken broth
    1 tsp. margarine
    1 small onion, finely chopped
    1 large carrot, cleaned and shredded
    2 T. chopped walnuts
    1/2 tsp. marjoram
    1/2 tsp. thyme
    1/2 tsp. rosemary
    1 can (4 oz.) sliced mushrooms, drained
    2 T. chopped parsley

    Place rice and broth in microwave-safe dish. Cover with plastic wrap and cook on high 3 minutes.

    Meanwhile, combine remaining ingredients in skillet, cook over medium heat until onions and carrots are soft. Stir vegetable mixture into hot rice. Serve.

    One 3/4-cup serving equals: 119 calories…3 gm fat…4 gm protein…54 mg carbohydrate…0 cholesterol…37 mg sodium ++++ Exchanges: 1 starch…3/4 fat
